A New Year’s Eve recipe from Italy: sausages with lentils

Sausages and lentils (“Salsiccia e lenticchie”) is a very traditional dish for the New Year’s Eve; it’s actually a “must” on all the Italian tables.
It’s usually eaten at the end of the long dinner celebrating the farewell to the old year and the welcome to the new one.
It’s said that eating lentils the New Year’s night brings money .

The traditional recipe is “ zampone e lenticchie” (zampone with lentils).
The “zampone” is the pork’s leg stuffed with all the pork’s remaining parts, left making homemade sausages.
I use regular sausages, here is the recipe:

INGREDIENTS FOR 6 PEOPLE:
¾ pound of dried lentils
1 carrot
4 tablespoons of tomato sauce
1 tablespoon of Italian extra virgin olive oil
1 clove of garlic
1 pound of pork sausages

DIRECTIONS:
Cook the lentils in a pan with ½ gallon of water.
When they are halfway cooked add the carrot, the tomato sauce, the garlic, the olive oil and the sausages, and keep cooking.
Serve warm.
